John and Gina’s sweets provide the Carlow public with homemade apple pies, lemon tarts, bakewell tarts, Victoria sponges, fruit cakes, chocolate mocha cakes, brownies, chocolate chip cookies, meringue nests. Christmas is a busy time and John and Gina sweets do not disappoint with an excellent range of mince pies, Christmas cakes and puddings.

John and Gina’s Sweets was established in April 2007. A married couple, John and Gina moved to Paulstown from Dublin in February of that year. John was eager to start his own business in the catering sector and a home baking enterprise in a farmers market was viewed as the perfect opportunity. With more than a little help from Gina, John was able to cook delicious home baked pastries from their domestic kitchen.
John served his apprenticeship in Conrad Gallaghers Peacock Valley and three years with Kevin Thornton. In 2006 he joined Compass Catering where he quickly won Compass Chef of the Year in 2006 and two bronze medals in Catex Chef Competition in the RDS.
Now two and a half years operating from the Carlow Farmers Market John and Gina have a strong base. They also sell their product in the local butchers in Paulstown and regularly receive orders from customers for special occasions.
John is currently Executive Chef in Carlow Institute of Technology and Gina is studying BSC in Counselling and Psychotherapy at Butler House in Kilkenny. John is ambitious and see’s his future firmly in the development of his stall in farmers markets. His vision has yet to be achieved.
